What's for Dinner?

A while back I gave you my tried and true method for boiled eggs, and it really does work - that is when you follow directions.  Now if you plop the eggs into the pot and crank the burner up on high, you're following directions.  But if you then go switch on the mind-numbing, I-can't-hear-a-thing vacuum cleaner and proceed to clean in the next room, well, I can't be responsible.  Oh wait, that was me (hangs head in shame).  When I had to shut the vacuum off to move to another room, as I'm limited by my 16-foot cord, I heard something that jogged me back to the present.  There was rattling and a weird hissing sound coming from the kitchen.  Water was bubbling over onto the burner, and the eggs were crying out that it wasn't enough to be boiled alive, but their little bodies were being badly beaten, too. 

I quickly turned off the heat, and figured since they'd had been at a hard boil for several minutes, they would be over cooked if I left them on the burner.  So in my effort to salvage the eggs, I pulled them off and set my timer for the usual 15 minutes.  This is what I got.



Eggs - medium well.  Unfortunately, they weren't suitable for my potato salad, but it wasn't the end for these eggs.  No siree!  I'd find a way to use them, and I came up with a plan.  This was last night's dinner.


I started with one large baking potato, scrubbed and diced.



And about 1 cup of chopped onions.



I cooked the potatoes and onions together over low to medium heat, and added salt and pepper.



In another pan I cooked 1/2 pound of "hot" breakfast sausage, and when it was browned I added the eggs and chopped them into the sausage.



I combined everything into one baking dish, topped with shredded cheddar, and warmed in the oven until the cheese melted.



It was pretty tasty, especially considering what inspired the dish.  Sometimes accidents are the mother of invention.

  1. Uh oh. Sorry about the eggs. They look freaky, don't they? I love how you saved them, though. The final dish looks delicious. I love fried potatoes, btw. I always fry Thanksgiving stuffing in the days after with some butter (well, a LOT of butter). Everything gets all nice and crispy.

    Now I'm starving!

    They were kind of weird. I guess it's what I get for not following my own directions. I was just glad not to waste the eggs, and the outcome was good.

    I love fried potatoes too. Actually, I love any kind of potatoes, fried, baked, mashed, french fries, they're all good. I like that stuffing idea, too.

  4. I leave my eggs unattended on the stove all the time. Usually not for vacuuming but for Tribal Blogs. That dish looks great, easy and really tasty. It's breakfast time, I think I might have to mess up some boiled eggs.

  5. Katherine- It was pretty good, and no eggs were boiled in vain.

    Jen- Yeah, I don't stand guard, but I try not to let them keep boiling either. One egg had a shell fracture.

    This is the kind of meal that's good anytime, and easy to change up according to what you have on hand!

  6. I'd of tossed them. That's just me. I do the 10 minute boil and they are perfect every time but I get concerned with "cracks". I would have never thought to use them. The dish is something only I would enjoy. Hubster doesn't do onions nor does my little one and my son doesn't do eggs. I'm so making myself a treat the next time I screw up eggs.

    Everyone's got their own sure-fire method for boiled eggs, don't they? Tossing them never occurred to me, though, I was just disappointed not be able to use them in my potato salad. That's the way my Mom always made it. What's funnier is that I never ate potato salad until after I was grown.

  9. Hi Brittainy, thanks for visiting. It was quite tasty, and I like the challenge of making up dishes from what I have on hand. Just for the record, though, you don't need to mess up eggs in order to make something like this. In fact, it made think about new uses for boiled eggs. There may be more experiments in the future.
